Winemaking Process
The handpicked estate grown fruit was whole bunch pressed with a short period of skin contact in the press.
To develop a wine with texture, complex savoury notes it was wild fermented in old barrels with full solids. There were no additions apart from a small amount of sulphur dioxide at bottling.
