Liv Zak Malbec 2019
Spiced fruits, Christmas cake and blackberry jam.
Blackberries and ripe satsuma plums overlay a palate rich with dense and velvety tannin finishing with a succulent dark chocolate finish.
A small parcel of our Malbec was hand harvested and destemmed at the winery to ferment in a small, open topped fermenter. We fermented with indigenous yeast and hand plunged once a day for gentle extraction of colour and tannin. Once sugar dry the must was pressed and after a brief settling period in tank was transferred to seasoned French Oak barrels to complete secondary fermentation and maturation. The wine was kept in barrel for 15 months before blending and bottling.
Vintage 2019 was a vintage of two halves, split down the middle by a rather extreme heat event where early March saw 5 days in a row of well over 35C. We fortunately had harvested all of our whites, rosé and Pinot Noir by this stage as we saw early flavour development in these varieties. These wines show great aromatics and brilliant natural acidities. The Shiraz , Cabernet Sauvignon and other robust reds were well prepared to ride out the heat through irrigation and shady, sprawling canopies. The rest of March was mild and even, with cool nights, resulting in wines with great depth of flavour and silky, refined palates.
