Liv Zak Pinot Noir 2019
Aromas of sweet strawberries, raspberries and rich Christmas cherries. Soft and Palate is fresh and vibrant with a racy line of acidity that carries juicy, bright red currants and summer berries and a fine, supple tannin structure.
Several different batches of Pinot from Warramunda Estate made up this blend: some were 100% whole bunches with no maceration, some 100% whole bunches that we then destemmed half -way through ferment and then plunged daily, and some were 100% destemmed, whole berry ferment with daily plunging. All ferments were completed with wild yeasts. The wines were matured in barrel for 10 months before blending.
2019 was a vintage of two halves, split down the middle by a rather extreme heat event where early March saw 5 days in a row of well over 35C. We fortunately had harvested all of our whites, rosé and Pinot Noir by this stage as we saw
early flavour development in these varieties. These wines show great aromatics and brilliant natural acidities. The Shiraz , Cabernet Sauvignon and other robust reds were well prepared to ride out the heat through irrigation and sprawling, shady canopies. The rest of March was mild and even, with cool nights, resulting in wines with great depth of flavour and silky, refined palates.
